7 day aged Yorkshire Lamb Crown


Crown roast of lamb is an impressive holiday centerpiece.  Regal is the best word for a crown roast of lamb.  It is made by joining together lamb racks that are tied together end-to-end into the shape of a crown. And just like the crowns that grace the heads of monarchs, crown roast of lamb is all about presentation.  Ideal just roasted as it is or stuffed.  Try stuffing with anything from fruit or herb stuffing or even a cous cous base. It is best to stuff it at the end of the cooking process to ensure the fat is rendered on the inside of the crown roast.
